Villadiego Semi-Cured

It has a pale yellow rind with consistency and firmness. The interior color is ivory white with small eyes and acidified lactic odor. It is reminiscent of dry grass, toasted pistachios, and almost inexistent elasticity in the mouth, with a buttery sensation of cream and almond flour.
