It has a yellow straw rind with consistency and firmness. The interior color is ivory white, with scattered eyes, small size, and acidified lactic smell. It has hints of dry grass, toasted pistachios, hazelnuts and almost no elasticity in the mouth, a buttery sensation with a touch of toasted almond flour.
